Cooked Mincemeat


Cooked minced meat is something that reminds me of Amma's love. She always sends us food packages - cakes, jams, pickles, various chicken curries, marinated fish, seasonal fruits and veggies from her garden. Minced meat too is often part of the package. I stash the minced meat packages in the freezer. Its easy to make cutlets, kheema, mince meat sponge or meatball curry. 

Cooked Mincemeat Recipe
Ingredients
Raw Mincemeat - 1 kg
Pepper powder - 1 tbsp
Salt to taste
Onions - 2
Ginger - 1" inch piece
Garlic - 8 to 10 cloves
Curry Leaves - 1 stalk
Mint ( Pudina) Leaves - 4 stalks (optional)
Method
Pressure cook the raw mincemeat with pepper powder and salt till done. Cool the meat. Mince again. The second mincing softens the meat resulting in softer cutlets and meatballs. Mince the onions, ginger, garlic, curry leaves and pudina leaves. Heat oil in a pan. Saute the minced onions, ginger, garlic, curry leaves and pudina leaves till fragrant. Add the cooked mincemeat and stir till most of the water has evaporated. It should not get too dry. Cool and freeze for later use in freezer bags.
